I’m not the only one who’d say they love peanut butter. I used to layer it on both sides of my bread and eat it. Add strawberry jam with it. Used to is the key term here…
Ever since I started paying attention to nutrition, peanut butter was the first to be cut… Sadly while it’s an amazing food, and tastes wonderful, it’s caloric density is ridiculous! 10g is around 64 calories. How much is 10g of peanut butter? A teaspoon… No one eats a teaspoon of peanut butter!
So. When I was cutting down my weight, peanut butter was seldomly eaten, and if it was, I’d substitute something out to be able to enjoy it for that day. Now, I’m on a maintenance/slight caloric surplus phase as I’m building strength this month. I’ve added peanut butter back into my nutrition.
However, I’m making it myself. Why? Because then it’s literally just peanuts. No extra sugars. I’ve made 2 batches.
Batch 1 – Just peanuts + water
I washed the peanuts to get as much of the oils out, then I got a blender and did my best to blend them. Added water everytime the mixture became too solid for the blender.
The result? The taste is very much different from store bought. It is not sweet, and not oily at all. In fact it is quite dry, but the taste of peanuts is very dominant.
I use this for cooking, or when I’m planning to mix it with something else like red bean paste or yoghurt. I don’t know it’s caloric info properly, but I judge it as peanuts basically. So 20g of this, I’d write it down as 20g of peanuts in my journal (which is overestimated, as it is part water and part peanuts.)
Batch 2 – Peanuts, milk, honey, whey protein
Now this stuff… It tastes amazing! Nutritionally, it’s heavy on the protein side which is very nice for me.
I washed these as well to get as much oil out as I could. But I thought to myself “if I can’t get the fats out, why don’t I just boost the protein and carb side to balance this out?”
And so I did! 300g peanuts, 22g whey, 60ml skim milk, 10g roughly of honey, and roughly 1 cup of warm water = best damn peanut butter ever! I haven’t broke down the nutritional info yet(as I made it today) but my gosh I know what I’m making for my third batch.
I used it as a post workout snack, and it tasted amazing!
Never buying store bought ever again!
